    Pathogen Information

Saccharomyces cerevisiae, also known as brewer's yeast or baker's yeast, is a single-cell eukaryotic organism belonging to the kingdom Fungi. This yeast is widely used in the food and beverage industry due to its ability to ferment carbohydrates into carbon dioxide and ethanol during the process of bread and beer production. However, under certain circumstances, Saccharomyces cerevisiae can become a pathogen and cause infections in humans, animals, and plants.

Saccharomyces cerevisiae is classified as a member of the Fungi kingdom, which includes molds, yeasts, and mushrooms. This microorganism is unicellular, with a spherical shape and varying sizes ranging from 3 to 4 microns in diameter. The cell wall of Saccharomyces cerevisiae contains chitin, β-glucans, and mannan, which are crucial for cell integrity and protection against environmental stresses. The plasma membrane of Saccharomyces cerevisiae is composed of sterols, phospholipids, and proteins that regulate the flux of molecules across the membrane and interact with the extracellular environment.

The S288C gene and Hsp104 protein are pivotal for Saccharomyces cerevisiae's growth and survival. The S288C gene is located on chromosome II and encodes a 12.1 Mb DNA molecule containing 6,138 open reading frames. These coding sequences encompass a wide array of biological functions, including metabolism, transcription, translation, and cell cycle control. The Hsp104 protein belongs to the AAA+ family of ATPases and is involved in protein disaggregation and refolding under heat stress conditions.

Saccharomyces cerevisiae can infect a range of hosts, including humans, animals, and plants, as an opportunistic pathogen. In humans, Saccharomyces cerevisiae can cause superficial skin infections such as diaper rash, as well as severe systemic infections like invasive candidiasis in immunocompromised individuals. This yeast is also a common agent of ear infections in dogs, causing otitis externa and otitis media. Furthermore, Saccharomyces cerevisiae can infect plants, resulting in fruit spoilage, particularly strawberries, grapes, and apples.

Diagnostic techniques for Saccharomyces cerevisiae include microscopy, culture, PCR, and ELISA assays directed towards the ITS (internal transcribed spacer) and D1/D2 regions of the 18S rRNA gene, which enable fungal identification. Additionally, ELISA assays can detect specific antigens produced by Saccharomyces cerevisiae, providing a fast and reliable method for detection and quantification. However, these diagnostic methods may require validation for each possible host affected by Saccharomyces cerevisiae.

In conclusion, Saccharomyces cerevisiae, a ubiquitous yeast commonly used in food and beverage production, can also act as an opportunistic pathogen, causing infections in humans, animals, and plants. The S288C gene and Hsp104 protein are crucial for this yeast's growth and survival. Diagnostic techniques for Saccharomyces cerevisiae include microscopy, culture, PCR, and ELISA assays directed towards the ITS and D1/D2 regions of the 18S rRNA gene, along with antigenic detection.
